The best avocado toast in London

In this week’s blog, we let you in on the secret to great avocado toast. Fancy trying it for yourself? Here’s the recipe. Don’t say we’re not good to you!

If you’ve ever had avocado toast at one of our shops in London, you’ll know we’re pretty serious about the smashed stuff. We’re not shy about what we serve, so this week we caught up with George, Head of Food at Over Under.

George gave us the lowdown on how he and the rest of the OU team make it. He even gave us some of his top tips. So if you’re ever caught out of London craving a great brunch here are our secrets laid bare just for you. 

Hey George, thanks for sharing with us. We’re ready for it, tell us the secret to the best avocado toast in London.  

Sure, first up you’ll need to get your hands on the following ingredients:

Ingredients

  • 2 avocados 

  • ¼ lemon zest & juice 

  • ¼ lime zest & juice 

  • 1 tbsp extra virgin olive oil

  • 1 pinch Maldon salt

  • 1-2 slices of sourdough bread

Garnish

  • Sunflower seeds

  • Pumpkin seeds

  • Maldon set salt

  • Micro coriander 

  • Micro amaranth 

  • Black pepper

  • Chilli flakes 

  • Dash olive oil

Then when you’ve got everything together, here’s the step-by-step that we follow at Over Under.

Method

  • Add lemon and lime juice into a large metal mixing bowl.

  • Cut the avocados in half, once the incision has been made twist the avocado so it opens out and you get two halves. Cut each half into quarters, remove the stone, peel the skins off each quarter, and place them in the metal bowl with the citrus juice.

  • Once all the quarters are in the bowl, use a hand blender or fork to roughly pulse the avocados into a coarse, chunky puree. Season with salt and olive oil. 

  • Toast the sourdough bread and spread the avocado puree on top. 

  • Grab the herbs, spices, and seeds and sprinkle them on top to garnish.

    Top tips

  • Make sure avocados hit the citrus juices straight away, don’t leave it to stand.

  • If you’re batching for a couple of mornings or using later in the day for guacamole and chips, make sure you keep it refrigerated.

  • Add more breakfast toppings if you’re feeling peckish. Eggs or bacon, you choose!

There you have it, avocado toast made the Over Under way.  Serve with eggs or eat it on its own, either way, when paired with an OU coffee you’ll be ready to start your day the right way.
